Ingredients

  • 2 eggs (I use Organic Valley cause I have seen their chickens and trust their farm practices- plus they are nearly sustainable!)

  • 1/4 cup coconut oil *sometimes I melt it before mixing, but not always

  • 2 bananas, ripe if possible

  • 1/3 cup honey or maple syrup *can omit this and add an extra banana

  • 1 /2 tbsp pure vanilla extract

  • 1 tsp baking soda

  • ¼-½ avocado

  • Pinch of sea salt

  • 1 tsp cinnamon

  • 2 cups of oats (option to sub gluten free oats)

  • 1-2 handfuls baby spinach depending on how green you want them.

  • 1/4 cup milk of choice (I like oat milk or Organic Valley 2% Grassmilk)

  • Option to add blueberries

 

Instructions

Mix all the wet ingredients in the blender first. Then add Spinach, then add the oats, cinnamon, salt, baking soda last- and DO NOT OVER MIX. I leave them kinda chunky with the oats. It makes them rustic and keeps them super light and fluffy. After making these dozens of times, I found that this method really makes them the perfect consistency. We eat them as snacks for breakfast and sometimes add some fresh whipped cream and have for dessert. They are truly a crowd pleaser! Great thing to make for new mamas too- all those oats help with milk production! I have now tried tons of different fruits and veggies with this recipe. You can shred carrots and add a little nutmeg, allspice and raisins and make carrot muffins. I have swapped zucchini for spinach, I have added broccoli jut cause why not, I have done it without greens and just added an extra banana and chocolate chips. The options are endless. As long as your wet and dry stuff stays at the same ratio you're good! GO play and have fun!
