The muffins of your wildest dreams
Greetings friends!
Happy MAY!! I hope you are feeling good and have found a rhythm to this newfound reality we are still (most of us) in. Navigating these ups and downs isn’t easy, but every day I try to accept this new life and fight the fighting of it. Some days are harder than others, but I try and focus on gratitude and stuff that feels good- whether a yummy smelling product or bath, a walk with good music, clean water to drink or a phone call that involves laughing- little joys help.
I embarked on a new journey around the sun this weekend and have never felt more blessed and grateful. Despite this strange new way of celebrating birthdays ( zoom, drive by parades, distance hangs, video messages- my birthday was a combo of all these things), there is something very special about this unique way of connecting with your tribe. It’s kinda like unrequited platonic love… just makes you miss people even more when you can’t hug them. I feel such a deep appreciation for the simple things in life; A bike ride, the smell (and view) of the ocean, flowers, a yummy meal, kind words from loved ones, a homemade card, a warm bed to sleep in. That was my birthday in a nutshell- and I feel so alive, so thankful and quite grounded.

This week I have a written workout and a yummy green recipe for you. I have never had more requests for a recipe than the Spinach Muffins below. Mind you, I did not create this masterpiece of a muffin. A friend of mine introduced me to this recipe by The Natural Nurturer and I was sold !! I have tinkered around and discovered ways to alter it, make it my own, and yield the perfect light and fluffy muffin… but the OG recipe is not my creation. These guys taste like the most bomb banana bread but happen to be filled with Spinach- and they are made in the blender so there is basically NO mess! From toddlers to breastfeeding moms, to ANYONE who likes yummy stuff in their mouth- they are a hit and have become a staple in our household. I use these BPA free silicone mini muffin molds or mini loaf pans to bake them, but do what works best for you!!

Spinach Muffins [Download to Print]
2 eggs (I use Organic Valley cause I have seen their chickens and trust their farm practices- plus they are nearly sustainable!)
1/4 cup coconut oil *sometimes I melt it before mixing, but not always
2 bananas, ripe if possible
1/3 cup honey or maple syrup *can omit this and add an extra banana
1/2 tbsp pure vanilla extract
1 tsp baking soda
¼-½ avocado (optional- sometimes I add and sometimes I don’t!)
Pinch of sea salt
1 tsp cinnamon
2 cups of oats (option to sub gluten free oats)
1-2 handfuls baby spinach depending on how green you want them.
1/4 cup milk of choice (I like oat milk or Organic Valley 2% Grassmilk)
Option to add blueberries
Pre heat over to 350 degrees. Mix all the wet ingredients in the blender first. Then add Spinach, then add the oats, cinnamon, salt, baking soda last- and DO NOT OVER MIX. I leave them kinda chunky with the oats. It makes them rustic and keeps them super light and fluffy. For muffins bake 17-19 minutes, mini muffins 13-15 minutes, loaf 30-40 min. After making these dozens of times, I found that this method really makes them the perfect consistency.
We eat them as snacks for breakfast and sometimes add some fresh whipped cream and have for dessert. They are truly a crowd pleaser! Great thing to make for new mamas too- all those oats help with milk production!
I have now tried tons of different fruits and veggies with this recipe. You can shred carrots and add a little nutmeg, allspice and raisins and make carrot muffins. I have swapped zucchini for spinach, I have added broccoli jut cause why not, I have done it without greens and just added an extra banana and chocolate chips. The options are endless. As long as your wet and dry stuff stays at the same ratio you're good! GO play and have fun!
